I am Uncle Fred. I just love beans. I eat them as fresh pods – I keep picking throughout the summer, and more pods keep coming! Prepare them by cooking in a little water. Cook lots and save some for the next day to eat cold in vinaigrette – delicious!
I love dried beans too. Some bean types are best for leaving on the plants until late summer/autumn. They will mature to the seed stage and be plump and dry in the pods before harvesting. Then they are shelled out and dried on more indoors. These bean seeds will be for storing and eating in the winter months in tasty vegetable casseroles or soups.

The uses of beans are endless as they can be used in so many healthy dishes, and they are an excellent source of protein in the diet. Try to save your own seeds of the rarer varieties. Easy to do and you won’t have to buy more to sow the next year!
